I am not afraid of carbs. My favorite form is bread, specifically toast. I’d like to think I was ahead of the trend on this one. Cheese and tomato on toast is not only a childhood classic, but an integral part of my current diet. I’m confident over certain periods of my life this was the sole substance I survived on.

Here are a couple new variations I came across on my recent trip to Australia.
Hotel Steyne, Manely Beach, Australia
Their Smoked Salmon Bruschetta is ridiculous! They combined flavors I love, but never had together. The menu description is – grilled sourdough, goats curd, smoked salmon, capers mint and grape vinaigrette. They didn’t list it in the description, but they also have halved red grapes on top. We loved Manely Beach so much we went back a second time and I ordered the exact same lunch!

Don’t let the name fool you. This isn’t a candy shop although the meals are pretty damn sweet! I eat avocado toast literally 3 times a week for lunch. This updated version is going to be my new go-to! The bread was perfect, generous portion of avocado and two poached eggs. We had lunch twice here too! Enjoy!
